Apple Cinnamon Crisp

Apple Cinnamon Crisp has always been one of our favorite desserts. It’s so easy to prepare, yet so many people tend to eat it at restaurants. Why? Crisps have such a wonderful flavor and as far as desserts go, work well with so many dishes. The fresh cinnamon apple flavor, reminds us of the Fall apple harvest when we can pick our own apples and go right to the kitchen and make all kinds of apple desserts.

Of course, we don’t wait for the apple harvests to make Apple Cinnamon Crisp. With a great selection of apples all year long, we can make it for our dinner guests, or more likely, ourselves, anytime we are looking for a simple, delicious dessert. Our version has a topping of brown sugared rolled oats. The little bit of chewiness of the oats and the light molasses flavor of the brown sugar gives a different texture than the crumble toppings we also use at times.

Servings: 6 servings

Ingredients:
Topping:
½ Cup All-purpose Flour
¾ Cup Light Brown Sugar
1 Teaspoon Saigon Vietnamese Cinnamon
¼ Teaspoon Sea Salt
½ Cup Cold Unsalted Butter, Cut into Small Cubes
1 Cup Old-fashioned Rolled Oats (not quick oats)

Filling:
5 Cups Sliced Apples. We use Granny Smith, but you can use Golden Delicious or other firm, baking apple.
2 Tablespoons All-purpose Flour
¼ Cup Granulated Sugar
¼ Teaspoon Ground Nutmeg
½ Teaspoon Saigon Vietnamese Cinnamon

Directions:
Preheat oven to 350°F. Spray a square baking dish, 8″ or 9″, with nonstick cooking spray. Set aside until needed.

Topping:
In a medium mixing bowl, add the flour, brown sugar, cinnamon, and salt. Mix until well combined. Add the butter cubes. Use a fork or a pastry cutter or fork, cut the butter into the dry ingredients until the mixture combines and is crumbly. Add the oats and stir in. Place the bowl in the refrigerator until needed.

Filling:
In a large mixing bowl, add the apples, flour, sugar, nutmeg and cinnamon. Stir well until the apple slices are coated with the flour mixture. Spoon the apples into the baking dish. Sprinkle the topping evenly on the apple filling. Bake at 350°F for 40-50 minutes, until the topping is lightly golden brown. Watch so the topping doesn’t burn or the filling bubbles over. When done, remove the baking dish from the oven and place on a a wire rack. Let cool a bit before serving. Add a scoop of good vanilla ice cream if you dare to be deliciously dangerous.
