Greek Salad Dressing

Greek Salad Dressing is a classic salad dressing, right along side Italian and French. While there are similarities, there are still many versions of Greek Dressing, just as there are many versions of a Greek Salad. The variations of both depend on where you are in the country, as well as family variations in these regions. We crafted our Greek Salad Dressing with the spices and herbs you find Greek cuisine. This is a very flavorful, savory dressing which works well with all Greek Salad variations. The oregano, basil, and other spices and herbs, when blended with red wine vinegar and the oil, will make your salad ingredients come alive.

When we make Greek Salads, we use also use classic ingredients found around the country. Romaine lettuce, garbanzo beans, fresh tomato, cucumber slices, green bell pepper, sliced beets, red onion, pepperoncini, kalamata olives and crumbled feta cheese. This mix of flavors with the salad dressing is a treat for us. The beets are found in Greek Salads in many regions, including the Detroit area, where we are from. Add cooked marinated chicken and you have a complete meal. The salads are usually served with grilled Greek pita bread, which is thicker and more bready than thinner, Middle Eastern pita.

You can also use the Greek Salad Dressing as a marinade for your chicken or beef souvlaki recipe.

To make the Greek Salad Dressing, place 5 Teaspoons of the dressing mix in a medium mixing bowl or salad dressing shaker bottle. Add 4 tablespoons of water, mix and let set for 5 minutes to allow the herbs to absorb the water. Add ¼ cup of red wine vinegar and ¾ cup of canola oil. Whisk well, or shake well if using a dressing bottle, until well mixed. Refrigerate any unused dressing. You can use extra virgin olive oil, but we prefer canola since it lets the herb flavors to come through more.
